KOOKING WITH KHA: STEAK WITH BO LUC LAC SAUCE

Former Masterchef Australia contestant Kha Nguyen hosts his own cooking show – sharing his favourite recipes and spin on Asian classics.

Ingredients:

• Steak
• 1 tbs Oyster sauce
• 1 tsp Sesame oil
• 2-3 Garlic cloves
• 1 Onion, sliced
• 80g Butter
• Sugar
• Salt

**** RECIPE TO COOK THE RED PASTE:
6 red birds eye chillies
5 shallots
4 cloves garlic
A knob of ginger
A knob of galangal
3 stalks lemongrass, peeled to the soft inner part
5 kaffir like leaves
A punnet of cherry tomatoes
A bunch of coriander roots
1 tablespoon of shrimp paste
200ml of oil
50ml of fish sauce

Blitz the chillies, shallots, garlic, ginger, galangal, coriander roots, lemongrass and kaffir lime leaves into a smooth paste. Add fish sauce and oil to make it smooth.
